Meal Plan Reset After the Holidays

Happy New Year! I hope everyone had a wonderful time with friends and family during Christmas and New Year's. Now that festivities have come to an end, it's time to start getting back into a rhythm.
It can feel like a mountain to climb to get everyone back on a schedule, especially when it comes to meals and cooking.

Today, I'm sharing some recipes my family will be
enjoying to start 2026. There are some new recipes we just discovered that we are loving. Some recipes are older ones I plan to add back into rotation. Trust me when I tell you they are adult and kid-approved! There are notes on how to make the most out of your meals to enjoy leftovers through the week. I hope these recipes spark some creativity to help you reset and start 2026.

Breakfast
All of these breakfast recipes can be made ahead of time and reheated throughout the week! One way my family stays consistent with nourishing, homemade breakfasts during the week is by having recipes we can easily bulk-prepare and reheat.
These pancakes are great for stocking your freezer. Make a double batch and pull them out when you need them. I love how easily they come together in a blender. My entire family loves them.
I make these in a 2-quart bowl to enjoy them for my family of 5 for most of the week. To have enough for your family, increase the recipe size by the number of family members and the number of servings. For example, I roughly double this recipe per family member.
I love citrus in the winter. We make this granola every winter to help brighten colder, cloudy days. The extra step of the orange zest is worth it. Be sure to follow the instructions exactly to ensure the zest is evenly distributed throughout the granola. My kids love having this with yogurt and fresh berries in the winter. If you don't love almonds, feel free to substitute your favorite nut, or omit them and add more pepitas.
Everyone in my family loves this baked oatmeal. Baked oatmeal is a great breakfast to have on hand. I have doubled this recipe and made it in a 9x13 pan. You will likely need closer to 45 minutes of baking time if doubling, but keep an eye on it, as ovens can vary. I have used chia seeds instead of poppy seeds, and it was still delicious!
Dinner
All of these recipes are easily doubled to enjoy leftovers during the week. Some of them even get better as leftovers, win! I love recipes that can be made during a busy week or prepped for the week ahead.
I have made this recipe a few times since discovering it at the end of 2025. You will want to double this recipe at least. It makes delicious leftovers and is easy to meal prep over the weekend. I even made it with ground beef instead of chicken because I was craving it and didn't have any chicken on hand. Ground beef isn't listed in the recipe, but it works well. It was so good!
This recipe is a must-make for lasagna lovers. My kids immediately requested it again right after I made it. I love how you can let most of it cook all day and only require minimal steps right before serving. I have tried several lasagna soups over the years–they were ok. This one is worth having on regular rotation. It's so good! To maximize the serving size for my family, I used 2 pounds of ground beef.
I love a good sourdough pizza, but sometimes you need something quick and easy. This tortilla pizza recipe is easy and adaptable–use your favorite tortillas. As a family that needs to eat gluten-free, this recipe is really nice to have a quick gluten-free pizza option. Tortilla pizzas are much simpler than any homemade gluten-free or sourdough pizza I have made. You can make them quickly, and your kids can easily participate. It's fun to make your own personalized pizzas, too!
Although this recipe has a few more steps, it still makes for a great weeknight meal. Or you can easily prep many of your ingredients over the weekend. I usually use 2 pounds of hamburger with this recipe. I like to have extra on hand to make more if we need it or for a delicious, quick lunch. I recommend reheating your stuffed peppers in a countertop convection oven for the best results.
